It’s that wonderful time of year when you get to bring the boots out of the closet and start to anticipate the time for cozy scarves and sweaters. Fall is the most popular time to wear scarves and there is no doubt that this fun accessory can change the look of an outfit in one second and we have our 6 favorite ways to wear a scarf with our favorite fall outfits gathered up right here for you.

WAYS TO WEAR A SCARF

 

1. Have your scarf be the center of the outfit

If you’re looking to wear a scarf in an attention-grabbing way don’t wrap it around your neck instead let is fall in front of you and add a skinny belt. This way to wear a scarf is best with a larger scarf. You want the scarf to end just above your knee and be large enough to make a statement. In this cute fall outfit, I went with a black and white look and added a gray and white plaid scarf to complete the look.

2. Wear an oversized knit scarf to soften up a look

Putting together a city chic outfit is always fun. To soften it up add a slightly oversized knit scarf. Pair your favorite black leather moto jacket with a scarf in the same color family to keep the cool vibe. In this fall outfit, I wore a gray knit scarf with a moto jacket, skinny jeans and leopard print heels. I also made sure I matched the color of the scarf with a clothing piece in my outfit, in this case, it was the long sleeve shirt under the moto jacket.

 

3. Wear a bright white scarf in a black and white outfit

In a time when everyone is wearing fall seasonal colors stand out by wearing black and white. In this fall outfit, I used the scarf as my starting point. I wanted to create a stylish outfit that made this scarf shine. I matched the white scarf with a white blazer. If you’re going to try this make sure the whites match. Don’t wear a jacket that is brighter than your scarf. To create a cohesive, look match your whites. I then added black leggings, a black tank top, and black heels.

 

4. Use a plaid scarf as the finishing touch in a stylish seasonal outfit

Have you ever put together an outfit and thought something is missing. Well, try adding a scarf! In this stylish fall outfit that I wore for a Thanksgiving family dinner paired dark wash jeans with riding boots, mustard sweater, and gray plaid scarf. I made sure the gray matched something else in the outfit so the gray cuffs on the sweater are the coordinating touch.

 

5. A jersey scarf can complete an outfit

If subtle is your signature look, go for a smaller scarf in a dark color that will blend into the entire outfit. You can wear a scarf with a blazer! I wore this outfit while sightseeing in Florence so I wanted to look dressy but still be comfortable. To add dimension to this outfit, I completed the outfit with a black jersey scarf.

 

6. Wear a scarf to keep you warm but look stylish as well

You can wear a scarf for its original purpose, to keep you warm. I wore this stylish winter outfit while in Venice and it was freezing there. I wrapped the scarf around my neck twice to keep me warm. This plaid scarf is the lighter item in the outfit. I wanted to add some dimension to this look so instead of wearing a black scarf I went for something light instead. Keep this in mind when putting together your outfit.

With winter going full speed and freezing temperatures showing up all over the map, it is hard to do outside activities. With this activity, you get to make something to place outside and watch through the window from where it’s nice and warm. This bird seed dough is so much fun to make, and since it is peanut butter free, it makes it safe for everyone!

Bird Seed Dough Bird Feeders by Katie Myers of Bonbon Break

What you will need:

  • 1/3 Cup of Flour
  • 1/4 Cup of Water
  • 1 packet of Gelatin
  • 1 1/2 Tablespoons of Corn Syrup
  • 2 Cups of Bird Seed

Supplies:

  • Drinking Straw
  • Cookie cutters
  • Mixing bowl and Spoon
  • Mat or Foil to put your seed on
  • Cookie sheet (optional)

How to make your own birdseed dough:

1. Put 2 cups of bird seed in a bowl

2. Add 1/3 Cup of flour

3. Next put in 1 1/2 Tablespoons of corn syrup

4. Then add 1 pouch of gelatin

5. Last add your 1/4 of water

Now mix well until all your ingredients are incorporated nicely and it looks something like this:Bird Seed Dough Bird Feeders by Katie Myers of Bonbon Break

Tip: Your mixture will be a bit sticky, but that’s okay!

Now the fun part!

The next step is to pat out your dough, this dough is too sticky to roll. Grab a mat or some foil and lay it on the table with a bit of cooking spray or oil on it to keep it from sticking. Once it’s on the mat, you can pat it out flat with your hands until it is about 1/2 inch thick.

Next, use your cookie cutters to cut shapes out of the dough. While your seed dough is still in the cookie cutter, slide it off the mat and onto a baking sheet.  Just press you dough back together so you can cut more.

This recipe makes about 12-15 bird seed feeders.

Before you bake the feeders, use a drinking straw to make a hole in each one so you can hang them when they cool.

Now its time to bake them! Put them in the oven at 350 degrees for 5-10 minutes (it depends on how big and thick yours turn out). You will know they are done when they are hard.

Tip: You can let the bird feeders air dry, but you need to let them sit over night until they are hard. (This can be a long wait for little ones.)

When your feeders are completely cooled (about 30 minutes), you can tie string to them so you can hang them in the trees for the birds to eat!

Now you’re ready to hang! We hung some right outside the window so that we could watch the birds enjoy their new treats.

I have heard about this for years, Bulletproof Coffee. You make your perfect cup of coffee and then you drop butter and oil in it… WHAT?! Seriously, on a tired morning with my head in a complete fog, I did just that and needless to say, I got it completely wrong.

Then it came up again and the coffee fanatic in the house said, “Let’s give it a go!” Low and behold we played with the idea and BLENDING it is key. As in, don’t just drop it in your cuppa joe and expect a miracle.

This recipe for Winter Morning Bulletproof Coffee will make two standard cups of coffee – or for my lovely partner, half a “cup”.

Tips:

No worries if you don’t have a French Press! You can simply use 10 oz of fresh brewed coffee from a drip maker or coffee pod and pour that right into your blender! (The blender is important for Bulletproof Coffee as it will help whip everything together, fully incorporating the flavors and frothing everything up. 

This post includes affiliate links for products mentioned in this recipe.

Ingredients:

  • 10oz really hot water (straight from your electric tea kettle is best!)
  • ¼ cup whole coffee beans (or about 3.5 tablespoons ground coffee)
  • ¾ cup cream or coffee creamer of your choice (for a vegan option, I find the Silk Almond Creamer Vanilla is a perfect fit)
  • 1.5 tablespoons unsalted organic butter or vegan butter (I like Earth Balance’s European Style 
  • 1 tablespoon unrefined coconut oil

If you need a French Press, this is a newer model of the one used here. 

Directions for Bulletproof Coffee:

  • Grind the coffee beans until fine.

  • Pour into the bottom of the French Press.
Pouring hot water over the coffee grounds for Bulletproof Coffee
  • Carefully pour the really hot water over the ground coffee.
  • Set the plunger into place and then let the water and coffee sit together for about 3 minutes.

  • While that is steeping, add the butter, coconut oil and cream or coffee creamer to your blender.
  • Then slowly press down on your French Press plunger until it is all the way at the bottom.
  • Transfer the coffee into the blender, add the lid and then blend on high for 15 to 30 seconds

Whether you are hanging out around a fire pit in the summer or tucked away from the elements in the winter, a few rounds of charades for kids can be a fantastic source of smiles, giggles and downright belly laughs. If you are slick enough to capture some of the performances on video, you will have laughs for days to come.

Over the recent break, my kids started this game up on their own. I bet you can guess which ones they came up with!!

On to the play, here are a few helpful hints to keep everyone giggling:

Charades for Kids Helpful Hints

  1. Are props allowed?
  2. Can the littlest players make sounds?
  3. Who is going to be the “reader” for the non-readers?
  4. Are you keeping score or just having fun?
  5. Will you have signals for “animal”, “person” or others?

Supplies needed:

  • Charades cards (printable here)
  • Hat
  • Timer
  • Paper and pencil (if needed)
  • Props (if needed)

Rules:

  1. Have the youngest player pick a card.
  2. The timer starts after the card has been read. They have 60 seconds.
  3. Other players guess what the actor is trying to share.
  4. If no one gets it, the person to the left can give the same word a try or they can grab a new card. The choice is theirs.
  5. Continue around the group.
  6. The game is over when one person scores 10 or everyone has had enough. Enjoy!

It just keeps raining. Apparently, summertime in the Midwest filed an extension on that whole “April showers” business. Sure, the fields and farmers are happy, but my cooped up preschooler
and toddler have had a thing or two to say about the matter. Sure, summer is the perfect time to shut off the screens and get outside, but what about on rainy days?

Several times this spring and summer, when the weather kept everyone inside, it became very clear to me that I had two choices:

Let my kids watch a mind-numbing amount of television until bedtime.

OR

Get creative.

Now, I’m not hating on screen time. I’ve plunked my kids in front of an episode of Team UmiZoomi more than once to get dinner cooked. Just being honest. Besides, they really do learn stuff like sign language, Spanish, music, nursery rhymes, patterns, shapes, and even how to turn the dumpiest house in the neighborhood into the home of your dreams!

Wait…that last one is Fixer Upper. That’s my jam.
Moral of the story: Screen time in moderation is fine in my opinion. What I’m talking about is not medicating the looong hours of nail-on-chalkboard boredom that your kids face when the weather doesn’t cooperate by hooking them up to a screen like tiny cyborgs.

So, here is my list of tested and approved activities to get your kids up and moving, and to engage their imagination and creativity (and YOURS). Most of these activities involve everyday objects lying around the house (like couch cushions…or a card table…or you).

11 Screen-Free Rainy Day Activities for Kids

 

1. Make and mail some homemade cards

Supplies:
Paint
Paint Brushes
Crayons/Markers
Construction Paper
Scissors
Glue

Clear off a table and set up some watercolors and crayons. Grab some scissors, glue, and construction paper (supervise the cutting!) and make a card for the grandparents, friends, or someone else special. Let it dry and send it to them in the mail. Wouldn’t that brighten anyone’s day?

Bonus Tip: If the children are too young to draw a picture, try tracing their handprints with their names and ages below each one, then let them scribble on the cover and add a message inside.

2. Build a car ramp

Supplies:
Card Table
Box or Couch Cushion

Sometimes happiness is my 2-year-old boy racing every car, truck, and train in his possession down a race track for an hour. Place one end of a card table (or some other flat, hard surface like a large lid) on a couch cushion or box. Grab every toy with wheels and send them flying down the ramp (sound effects encouraged).

Bonus Tip: Add a second ramp on the other side of the cushion and hold a drag race.

3. Build a maze

Supplies:
Cushions
Pillows
Chairs
Boxes
Ottomans
Bed sheets/Blankets

Clear a space in the playroom or living room and assemble a maze with your children using furniture and boxes. Create tunnels using bed sheets and blankets. Hide objects and send them on a rescue mission to retrieve them. This activity is a bit more involved, but it also gives your children a chance to use their imagination and construct something fun with their hands.

Bonus Tip: For a circle track, place an ottoman in the middle of the room, leave a large space around it (for running), and then surround it with a wide circle with chairs, boxes and pillows.
Leave some exits otherwise you’re probably going to clean up after some very dizzy kids.

4. Create a “dry” muddle puddle – (My Kids’ Favorite)

Supplies:
Cushions
Pillows
Blankets
Stuffed Animals

Desperation was the mother of this invention. I was babysitting my friends’ boys who were around the same age as my two. My four tiny charges were moping around the house devastated that it was raining and they couldn’t go outside to play. Attitudes were disintegrating.

So we threw every soft item we could find into the middle of the floor and (SAFELY) took turns jumping into our very own indoor “mud puddle.” By the end, all four kids were red-faced and panting with giant grins on their faces.

Bonus Tip: You can change the title of this game as the seasons change – once again engaging
your child’s imagination. In the summer, we call it a splash pad. In the fall, it’s a leaf pile. And in the winter, it’s a snow mound.

5. Dinner prep together

Supplies:
Ingredients
Mixing Bowls
Tiny Taste Testers
Aprons (optional)

Remember how I said I let my kids watch a show while I got dinner ready? That was becoming a normal pattern for us, so I decided to invite the children to help me get dinner ready. It could be as simple as letting them stir or add seasonings or bang a wooden spoon on a bowl while you do the cooking.

My daughter got a little apron for Christmas last year and now little brother wants one, too. It’sone more way to see my kids enjoy time at home doing something together without that habitual pre-dinner Netflix show.

6. Indoor Hopscotch

Supplies:
Large cardboard box
Scissors
Marker

Slice open the biggest box you can find, lay it out, and draw a hopscotch board on the inside. Clear a space in the house and let the bouncing begin. This game helps your children learn their numbers.

Bonus Tip: Get out some crayons and let your children practice tracing the big numbers (or adding their own drawings for fun).

7. Card Games

Supplies:
Deck of Cards
Bowl of Snacks

I mean, do you remember how fun “Spoons” was when you were a kid?

8. Hire some help

Are your children old enough to sort socks, fold towels, make their beds, load the dishwasher, clean up their room or set the table? Hire them to help you. Not only does this help them develop a work ethic, but you can begin the conversation about what to do with money, how to save, how to spend, and how to give.

You shouldn’t pay them for every task they ever do, but you’re not spoiling them by instructing them how to earn and use money responsibly at a young age.

Bonus Tip: If your child is young (3-5 years old), pay them for tasks the moment they’re complete to make sure the lesson makes the most impact.

 

9. Easy Playtime Tent

Supplies:
Table
Bed Sheet
Blanket

Clear off your table and use the chairs to create a walking path leading up to the table. Spread a fleece blanket on the floor under the table. Throw a large bed sheet over the table and chairs to make a roof. Tada. Tent.

10. Recreate the outdoors in your living room

Supplies:
Blankets Pillows Laundry Baskets Household items the color of nature

My 3-year-old invented this game on a lazy, rainy day. She found a small, round, green laundry basket and held it up, asking, “Can we make this into a tree?”
Before long, the entire living floor was transformed. A floral blanket became a meadow. A blue pillow case was a lake. The green basket sat atop a stack of boxes with a brown towel draped over one side as a tree trunk. Pillows became boulders. I’m pretty sure at one point I was playing by myself, so lost was I in the transformation.

11. Change up story time

Creating new fun can be as easy as changing an old routine. Instead of reading a storybook in bed or on the couch, try a few of these fun alternatives:
 Listen to an audio book. The library has a lot of these, from picture books to chapter books. Not only does this give your children a new way to enjoy story time, but it teaches them how to sit still and listen which will help them in countless ways down the road.
 Read where you land. Was today “mud puddle” day and you’re all lying in a heap of pillows and blankets right before bedtime? Great! Grab a book and read there. If it’s
under a table, then read under the table.
 Read by flashlight. Pitch a tent with a few chairs and blankets. Kill the lights and read in the tent.

Yes, this is a simple recipe for a Hearty Rosemary Chicken Soup, but it is so much more. Garlic, sausage, spinach, onion, and potatoes are also present to make this soup a Fall favorite in our house.

When I received a new Dutch oven, I struggled to decide what to make first in this beauty. Quickly, the air turned cool and all I could think about was soup and casseroles.

We had one of those nights where there wasn’t much in the kitchen and I just started throwing ingredients together. It was actually pretty good and my kids both had seconds. Hmmmm. The next week, I tried it again, adding a little more garlic. Again, it was a hit. Then this week, I KNEW I had the magic finish. YES!

The game changer is three-fold: 1) rubbing the Dutch Oven down with garlic, 2) using a Dutch Oven to take advantage of those seared bits in the bottom of the pot, 3) the vegetable broth – SO much more flavor with Pacific’s Vegetable Broth.

As I am sitting here typing, I asked my better half, “What are we going to name this soup?” His response? “Satisfaction Soup.” That’s right. It is THAT good and when the winter blues or the season’s colds hit, you will want to have a pot of this ready to go.

This simple soup is the perfect recipe for Fall. A Hearty Rosemary Chicken Soup will warm you on even the coldest nights. #Glutenfree

Hearty Rosemary Chicken Soup

Ingredients

  • 1 1/2 lbs ground sausage
  • 1 whole organic chicken cleaned and quartered
  • 3 sprigs of rosemary
  • 6 cloves of garlic 2 smashed, 3 chopped
  • 1 large onion diced
  • 3 boxes of vegetable broth
  • 10 oz frozen cut spinach
  • 4 carrots thinly sliced
  • 4 white potatoes diced
  • Grated parmesan optional

Instructions

  • Take 2 cloves of garlic, smash them and rub them all over the bottom of your Dutch oven.
  • Over medium heat, brown sausage and then remove from the Dutch Oven.
  • Add rosemary sprigs, garlic and onion. Place chicken in Dutch Oven, skin side down. Flip after 7 minutes and stir onions and garlic around from the bottom. Place lid on top and let everything cook for 15 more minutes.
  • Add 2 boxes of vegetable broth, sausage, spinach and carrots. Simmer for 45 minutes.
  • Remove chicken from the pot. Remove the meat from the bones and add back to the Dutch Oven.
  • Skim fat from the top of the soup.
  • Add potatoes and simmer for 20 more minutes.
  • Serve and top with grated parmesan. Enjoy!

Notes

The extra box of vegetable broth is to increase the volume of the broth as you work your way through the pot the next day 😉

I love December 21st, the longest night of the year here in the Northern Hemisphere.

During this time, also known as the winter solstice, the Earth’s axis tilts the furthest away from the sun, giving all locations north of the equator less than 12 hours of daylight.

For years I’ve been fascinated with how ancient cultures followed the movement of the sun throughout the sky. I love tales of feasts and parties to celebrate the end of the dark, cold nights as the days become longer and the nights become shorter.

For my family the winter solstice is a special night, a night where we like to put a modern spin on history and a night where we take a break from traditional Christmas festivities and the chaos of the holiday season. We like to celebrate the longest night of the year with light, warmth and outdoor adventure.

Here are a few fun ways to celebrate the winter solstice if you’re looking for a night of outdoor celebration, instead of a night at home watching reruns of holiday movies.

  • Select a Yule Log to be burned on the winter solstice. You can burn it in your fireplace or outdoors. Tradition has it that once the log has been lit it should remain remain burning. Some people decorate their Yule Log and others even save the remains to start the Yule Log fire the following year. We like to burn a special log that we’ve decorated with ribbon and leaves in our outdoor fire pit and celebrate with festive foods and drinks to warm and brighten the cold, dark winter night.
  • If you live in a cold place make your own Finnish ice candles by placing a small circular container weighed down with rocks instead of a larger circular container. Add water to the outer circle, let the water freeze, remove the containers and stick a candle inside of the ice. The candles will emit a magical glow. Ice candles are traditionally used to remember deceased loved ones and family members during the holidays, but I like to think of them as adding light and warmth to the long night.
  • If it’s a clear night take a few minutes to look at the sky. See if you can identify constellations such as Sirius, Orion, Capella, Taurus, and  even the planet Jupiter
  • Or better yet, bundle up your children and head to a nearby park, national forest or nature preserve. Explore the dark night on cross-country skis, snowshoes or just with your hiking boots. If you’re feeling bold and on a trail that you’re comfortable with turn off your headlamps and let your eyes adjust to the darkness for a unique and fun experience. If you’re really brave and really want to get away from the holiday madness enjoy the long night by camping in a tent, yurt or cabin.

For me, the holiday season is about creating memories, having fun and spending time together as a family. The winter solstice is the perfect opportunity to create those memories and get outdoors.

Christmas Charades for Kids – How to Play

To get your game of Christmas charades underway this year, you will want to construct a list of the best charade words. Using individual pieces of paper, take the time to write down each word, placing them all in bowls. Mix up the words inside the bowl and allow the youngest in the family to take the first turn, choosing a word from the bowl. Set a timer, having the player act it out without saying anything. Snow Dough Recipe

To make this snow dough you will need to add 2 parts cornstarch to 1 part conditioner. ( I did 2 cups cornstarch to 1 cup conditioner)

1. Add two parts cornstarch to a bowl

2. Add 1 part of the hair conditioner to the cornstarch

3. Mix the two ingredients together until they are incorporated well

4. The fun part! Use your hands to form the mixture into a dough. If your dough is a little sticky just add more cornstarch.


TIP: All conditioners are different consistency so you might have to add a bit more cornstarch, only if your dough is a little sticky.


Now have fun! We put out cookie cutters and rolled balls to make snowmen, and spent lots of time smelling a squishing our soft dough.  It is such an easy dough to make and it makes hours of fun play.

To store your Snow Dough just place in an airtight container or a zip lock bag.

Thanksgiving and Christmas are popular days for moviegoers, and while the holidays are often prime season for heavy dramas and Oscar bait, there are usually some great picks for kids, too. This year is no different: From highly anticipated sequels to soon-to-be Christmas classics, there’s plenty for little kids (and even parents and older siblings) to enjoy at movie theaters this holiday season.

On Christmas Eve, Clara (Mackenzie Foy) receives a nutcracker from her godfather (Morgan Freeman); at the stroke of midnight, it comes alive, and they’re transported to a gorgeous, magical world. There she meets the Sugar Plum Fairy (Keira Knightley), Mother Ginger (Helen Mirren), the evil Mouse King, and more. Many families will be familiar with the story, but Disney will likely up the fantasy action with intense battle sequences.

What’s the buzz? Dr. Seuss’ The Grinch is a full-length animated version of the classic holiday book from the studio behind Despicable Me and Sing. He disguises himself as Santa Claus and — with the help of his dog, Max — sets out to steal Christmas from the Whos. This holiday story will likely bring lots of laughs, and it includes some slapstick and rude humor, but it should be mild enough for younger viewers — and will hopefully come with plenty of positive messages.

What’s the buzz? Ralph Breaks the Internet is the sequel to Disney’s animated comedy Wreck-It Ralph. This time around, Ralph (voiced by John C. Reilly) and Vanellope (Sarah Silverman) travel to the internet through a new Wi-Fi router and discover infinite possibilities for fun (and trouble). The first movie had strong positive messages but also a lot of rude humor and some scariness; you can expect similar content in the sequel. This is also the first Disney movie in which princesses like ElsaMoana, and Rapunzel appear outside of their own franchises/storylines, which will definitely appeal to kids. Just be ready for internet-based jokes — about things like pop-up ads, clickbait, and online shopping — that might go over kids’ heads.

What’s the buzz? Elliot: The Littlest Reindeer is an animated underdog story about a miniature horse who dreams of pulling Santa’s sleigh. Mini-horse Elliot (voiced by Josh Hutcherson) decides to try out for the open spot on Santa’s team, despite being much smaller than the other reindeer. With the help of his goat friend Hazel (Samantha Bee), Elliot trains and enters the tryouts. But when his friends back home are in danger, Elliot is faced with a difficult choice: save his friends or follow his dreams. Morena BaccarinJohn Cleese, and Martin Short also lend their voices to the cast. Expect some rude humor and insults, but overall this looks like a family-friendly Christmas story.

What’s the buzz? Mirai is an anime fantasy film about a young boy who learns to adjust to a new baby sister in a magical way. After his parents (voiced by John Cho and Rebecca Hall) bring home new baby sister Mirai, 4-year-old Kun is overcome with jealousy and sadness until a magical family tree turns his world upside down. He travels through time and meets his family members at different ages, including a teen version of his baby sister. With her help, Kun is able to change his perspective on family and welcome the new baby into his life. This film looks like a sweet, original take on an older sibling coming to terms with a new brother or sister. Although the main character is a preschooler, parents might want to be careful with young or sensitive viewers, as there could be some intense images or situations.

When’s it out? December 14
What’s the buzz? Spider-Man: Into the Spider-Verse is an animated superhero adventure that adds a twist to the familiar Spidey story. Miles Morales (voiced by Shameik Moore) is a prep school student from Brooklyn with web-slinging powers. But then he meets another Spider-Man named Peter Parker (Jake Johnson), who claims to be from a different dimension. They team up with another “spider-person,” Gwen Stacy (Hailee Steinfeld), to take on an inter-dimensional threat. This movie doesn’t take place in the same universe as Spider-Man: Homecoming, but it’s based on the 2011 Marvel comic (and novel) that first introduced the young, mixed-race Morales. In addition to stunning animation, you can expect some violence, peril, rude language, and flirting, but overall this will likely be less intense than the live-action Spider-Man movies.

When’s it out? December 19
What’s the buzz? Mary Poppins Returns is a follow-up to the classic 1964 musical about the world’s most magical nanny. It’s based on the many other Mary Poppins stories written by P.L. Travers and takes place many years after the original. By now, the Banks children have grown up and had kids of their own. But after a tragic loss, Mary Poppins (Emily Blunt) returns into their lives. With her magic bag and the help of her friend Jack (Lin-Manuel Miranda), she helps the family rediscover joy and wonder. It’s hard to follow in the footsteps of the wonderful original, but with a star-studded cast that also includes Meryl StreepColin FirthAngela LansburyDick Van Dyke, and more, this looks like a kid-friendly movie the whole family can appreciate.

We love our spicy food and we love enchiladas, but I had to change it up. It is Fall and that just screams “it’s time for squash, kids!” so I thought I would try mixing one of our favorite flavors with one of our favorite squashes and “Voila!” the Green Chili Enchilada Spaghetti Squash Casserole was born.

I won’t lie. I wondered if my kids would take the bait and go for this instead of enchiladas and lo and behold, they did. They even asked for seconds! I think that might have to be my new standard for whether or not I will share a recipe. For example, the stew I made the other night? One helping. You won’t be seeing that recipe here. I should have stuck with my Pot Roast recipe which is a winner. Well, a girl has to try, right?

While we have lots of time-saving recipes to help with your meal planning, this isn’t one of them. However, it is just a little over an hour which isn’t as bad as I thought it would be. Let’s go ahead and get started, shall we?

This Green Chili Enchilada Spaghetti Squash Casserole is naturally gluten free and kicks up one of our favorite winter squash recipes. We tried this two ways. The first was to stuff the chicken mixture back into the spaghetti squash shells. This presents the recipe really well and there are fewer dishes to clean. We also baked one in a casserole dish. This was a pain to clean, however, it was easier to store leftovers. The kids had a lot more fun digging into the stuffed spaghetti squash shells, so for us, I think that was the winning option.

Our Green Chili Enchilada Spaghetti Squash recipe is a new family favorite. Bring a little spice to one of our favorite winter squashes.

This recipe is naturally gluten-free and could easily turn into a vegetarian dish with some minor adjustments like replacing the chicken with chopped red, yellow and orange bell peppers and not using the sour cream. Wouldn’t that be pretty? We might have to try that combination next!

Ingredients

Spaghetti Squash

  • 1 spaghetti squash cut in half with seeds removed
  • 1 tbsp extra virgin olive oil
  • salt and pepper

Chicken Mixture

  • 1 pound chicken tenders
  • salt and pepper
  • 1 large onion diced
  • 2 4-oz cans diced green chilis
  • 1 10-oz can green enchilada sauce
  • 1/3 cup sour cream

Final

  • 2 cups Mexican blend cheese
  • cilantro coarsely chopped

Instructions

Spaghetti Squash

  • Heat oven to 350 degrees.
  • Cover a cookie sheet with foil or parchment paper.
  • Drizzle olive oil over cleaned spaghetti squash halves and then sprinkle with salt and pepper.
  • Flip onto the cookie sheet - oiled side down - and bake for 45 minutes. 

Chicken Mixture

  • Drizzle skillet with oil and heat over medium-high heat. Dry chicken tenders and then sprinkle with salt and pepper. Add to the heated skillet and cook for 5 minutes. Add onions and saute for 3 minutes, until they are opaque. 
  • Add green chilis and green enchilada sauce. Simmer until reduced. About 30 minutes. Stir frequently. Using forks, shred chicken.  Add sour cream and mix thoroughly.

Final

  • Remove squash from the oven and allow it to cool for 10 minutes. 
  • Using a fork, scrape spaghetti squash into a large bowl. Add the chicken mixture to the bowl and mix thoroughly. 
  • a) Place the mixture back into the spaghetti squash shells -OR-
    b) Place the mixture into a casserole dish.
  • Sprinkle cheese on top of the squash mixture and bake on a low broiler for 8 minutes until cheese is melted and slightly browned. Serve hot with cilantro and a sprinkle of Tapatio, if that suits your taste buds.
