Her fluorescent pink high heel left a painful impression on the bottom of my foot. A Barbie shoe. I placed the plastic piece on the top of the fridge (where all horrible toys and little pieces go to die) and looked around to see the mess and toys that covered our house.

That little shoe was just another poke at me feeling overwhelmed with my inability to keep my house clean. The floor reflects our weekday story and the fast shuffles that take place each day.  My son’s underwear is on the floor next to my daughter’s hairbrush, which is next to a U.S. state map puzzle that went unfinished. Plastic parts and toys peek out from under the piano seeking shelter by dust bunnies. I remember the couch was a great place to sit long ago when it wasn’t covered in unfolded clean laundry. And my dining room table is currently being eaten by paperwork.

Calgon, take me away.

Bliss is just a bubble bath and chocolate bonbon away, right?

I think so; I’m all about self-care.

These melt-in-your-mouth dark chocolate Nutella Bonbons are perfect for yourself or great for sharing (the recipe makes 30).When the day is long, the house is a disaster, and the only relief is chocolate, give yourself a bonbon.

Not just any bonbon, give yourself a Nutella bonbon. I know what you’re thinking. When you need medicinal chocolate, the last thing you have in great supply is time. You need that chocolate ASAP. Stay with me.

There is no baking.

There are only four ingredients.

The recipe is simple.

I can hear you cheering. Cheering is totally allowed.

These melt-in-your-mouth dark chocolate cookies are perfect for yourself or great for sharing (the recipe makes 30). Cosmo called my Nutella Bonbons, “Pleasure Grenades.” I giggle every time I write or say that. Standing in my living room looking through the motherhood chaos, I know two things: no matter how many times I give in and clean up this mess, the mess returns in no time and second. I need to give myself more bubble baths and bonbons.

Ingredients

  • 1 ¾ cup Nutella
  • ½ cup salted butter softened
  • 2 cups powdered sugar
  • 10 ounces bittersweet chocolate

Optional

  • sea salt

Instructions

  • In a stand mixer, blend Nutella, butter, and powdered sugar until combined. 
  • Form into 30 balls. 
  • Once balls are formed, heat chocolate, and dip each ball. 
  • Once dipped, add sea salt if desired.

Imagine walking into your house and the smell of fresh baked cookies envelopes you as you enter the door. What is it about that smell that is so inviting and heartwarming? Now imagine seeing Triple Chocolate Chip Cookies sitting on a plate on the counter, just waiting for you to dive in. Yum.

These cookies conjure up and good feelings each and every time. Honestly, any time someone bakes something for you, you can feel the love in every bite.

Are things tense in the office? Bring some homemade chocolate chip cookies.

Are you grateful to the amazing office staff at your kids’ school? Bring some homemade cookies.

Did a good friend just break their arm? Bring these triple chocolate chip cookies.

I try to keep these ingredients on hand all of the time. 25 minutes to a happy heart for someone and 24 cookies – although they might only receive 23. 🙂

Triple Chocolate Chip Cookies

Ingredients

  • 1 stick butter softened
  • 1 cup brown sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 egg large
  • 1 1/3 cup flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ¾ cup white chocolate chips
  • ¾ cup milk chocolate chips
  • ¾ cup dark chocolate chips

Instructions

  • Line a large baking sheet with parchment paper.
  • Preheat oven to 350 degrees.
  • In a large mixing bowl, beat together butter and sugar.
  • Add in extracts and egg, then beat until light and fluffy.
  • In a separate bowl, whisk together flour, salt, and baking soda.
  • Add flour mixture to butter mixture, and mix until just combined.
  • Using a spatula or wooden spoon, gently fold in all 3 kinds of chips.
  • Scoop into 1 inch mounds, then bake for 11 minutes.
  • Allow to cool on pan for 60 seconds before moving to a cooling rack.

I love my small island, I truly do.  However, sometimes I wonder if I am missing out on mainstream America.  Luckily, my husband grew up in New York City and his parents still live in Manhattan.  So, we make it a point to have lengthy visits in the Big Apple – plus my mother-in-law is an artist, intellect, and a great finder of the next best thing.  In this case, she found Grapefruit Brûlée (AKA Grapefruit Brulee for those searching without the special characters).

This past January, I got a phone call describing this seriously expensive (when eaten out) and yummy breakfast item that involves a grapefruit, sugar, and a flame torch.   How expensive might you ask?  Try $7 for half a grapefruit!  Crazy, but apparently, well worth it.

My husband’s response, “Let’s feel extravagant and blowtorch some grapefruits ourselves!  How hard can it be?”  At our island market, grapefruits were on sale for 2/$3.00 (and on an island, food is expensive).   Made at my home, Grapefruit Brûlée costs about $1.50 and I can have as many as I want (maybe even 6 servings in one sitting).

Grapefruit Brûlée

You will need a blowtorch and a serrated spoon.

Ingredients

  • ½ grapefruit
  • 1-2 Tablespoons granulated sugar

Instructions

  • Cut the grapefruit in half crosswise.
  • Sprinkle 1-2 Tablespoons of sugar over the top of the ½ of grapefruit.
  • Light the blowtorch, hold it close to the sugar on the fruit, and move it over the top of the fruit.  It is important to keep the flame torch moving so that you do not light the skin of your grapefruit on fire.
  • When the sugar is bubbling and has turned a brownish color, turn off the torch and enjoy!

We tried both sectioning the grapefruit and leaving the grapefruit sections intact before pouring the sugar on the fruit and using the flame torch.  For taste, the non-sectioned grapefruit is best.  For eating ease, the sectioned grapefruit is better.

Christmas Chocolate Cherry Mice

These are the perfect holiday treat to bring as a gift or for a classroom party.

Ingredients

  • 18 maraschino cherries drained and dried
  • 1-1 1/2 cups milk chocolate melted
  • 36 sliced almonds
  • 18 Hershey kisses
  • White chocolate small amount melted for eyes

Instructions

  • Dip the maraschino cherries into the chocolate and let the excess drip off. Place a Hershey's kiss at the bottom of the cherry and lay both on wax paper lined cookie sheet. Let the chocolate harden slightly and add two almond sliced for ears. Repeat for all eighteen mice. Place the cookie sheet in the fridge to set the chocolate. When set melt the white chocolate and using a toothpick dipped in the chocolate create eyes. Let set again in the fridge.

Manuela of Cooking with Manuela shares her simple, straightforward recipe for preparing these delicious, diminutive desserts.

Manuela says: “There are many variations, all very similar. And all (or most!) very beautiful. So, the other day I got inspired, and looked up a bunch of recipes to try out these apple roses. There are several ways you can prepare them. You can make your own dough, or, like I did, use store bought frozen puff pastry. It’s much easier and a lot quicker!”

Manuela’s instructions include a step-by-step video that will convince you to make these tarts as soon as you can. While they’re simple enough to make on a weeknight, they’re impressive enough to serve at the end of a special meal. Funnel cakes are an instant crowd pleaser. We love snacking on them at the local county fair during the summer, but can you imagine my kids’ surprise when I whipped up a batch on Christmas morning last year?! I knew I wanted to try this recipe from Cooking Bride, but when I saw how easy it was, I knew it could be trouble! Whip up a batch to sweeten your littles’ weekend or add a special touch to a holiday brunch.

An added bonus? Just because I have a gluten allergy doesn’t mean I cannot indulge in a childhood favorite with my family. We tried this recipe with an All-in-one gluten free flour and it didn’t need any adjustments! It was just as good, if not better than the version I remember from the fair. If your batter starts to thicken up too much, just add a little milk or water to loosen it up. You want to make it easy to get those fun, swirly designs.  ~Val

You don’t have to wait until the fair rolls into your town to enjoy this deep-fried snack. Funnel cakes are so easy to make at home. Once the hot cakes come out of the fryer, coat them high with powdered sugar and keep plenty of napkins handy.

Love is in the air and this no bake balsamic strawberry tiramisu is the perfect sweet treat to make for your honey this Valentine’s Day. The Seaside Baker describes Jackie perfectly since she is the queen of simple and delectable desserts. This tiramisu in particular is one of my favorite things she’s made because

“..not only is it light and refreshing, but it is a NO BAKE dessert”.

That is what I am talking about! It doesn’t get any better than that. We all lead frantic lives, but it’s important to take a little time to do something nice for those we love. Special doesn’t have to mean complicated. Sometimes special means no bake. You’ll definitely make your whole family feel special with a big pan of this gorgeous strawberry balsamic tiramisu. Don’t worry about the kids not loving the balsamic, Jackie explains:

“Balsamic vinegar brings out this amazing sweetness from the strawberries, leaving no residual balsamic flavor.”

Like I said, a treat for the whole family!

There are all kinds of holiday cookies out there, but you can’t beat gooey chocolate holiday cookies. They’re far and away the best in my opinion. Lindsay at Pinch of Yum goes so far as to describe her mini chocolate thumbprint cookies as fudgy ….or not.

“These are fudgy bliss. Unless you don’t want them to be fudgy, in which case you can bake them on the longer end and let the frosting set longer and you’ll end up with more of a shortbready sort of thing”

I love that she gives you options. The best part about these cookies is Lindsay’s story about making them with her students in the Philippines during a typhoon. She tells about students who didn’t really know what frosting was, and curious neighbors who were peeking in to see what all the giggling was about. I love cookies, but the real spirit of the holiday season truly lies in sharing the experience of baking with those you care about. Love makes everything taste good. Chocolate or not. ~Betsy

Yay for holiday cookies! As I mentioned before, I’m one of those people who makes cookies for my neighbors, my postal worker, the dry cleaner, the UPS man, the gardener, and the pool man. Let’s not forget my friends and family! Each year I get together with a friend in an event we dub “cookiepocalypse” and bake dozens of cookies in one afternoon to distribute throughout the community. Full disclosure: there may be some wine drinking involved in this endeavor.

Once November rolls around, I start to scour the internet for fun and new cookie recipes to try along with our classics. This year, these lemon-rosemary pine nut shortbread cookies caught my eye. First of all, the cute star shape is completely irresistible. Secondly, as a good Scottish girl, buttery shortbread has always been a part of every family celebration. Finally, I’m loving this flavor combination!

 “The rosemary adds a subtle savory note behind the sweetness of shortbread full of intense lemon flavor and pine nut richness.  And when you hit on one of those salt crystal nestled inside, this crazy flavor explosion makes you need to eat more.”

 I cannot wait to make these. There’s something very “holiday” about lemon and rosemary together if you ask me. I’m even more excited to see what my shortbread-loving family has to say. Something tells me they’re going to be asking for the recipe.

Sparkling sugared cranberries may just be the perfect holiday snack. They’re simple, seasonal and super easy to make. Guilt free? Sooooort of. They’re definitely better for you than the traditional southern style coconut cream cake I make each Christmas and they are definitely a gluten free snack!

In my opinion, November is a time to indulge in savory foods. Turkey rules the month, but let’s not forget about the stuffing, potatoes and gravy! Now that the calendar is about to flip to December, my focus is shifting to all things sweet. Cookies, truffles and cakes are on my mind this holiday season. When I saw these sugared cranberries, I knew they needed to be added to my December sweets roster.

“They’re incredibly easy to make with just 2 ingredients, and they’re perfect for dressing up desserts! Not only that, these tart and sweet cranberries are so perfect for holiday snacking. I’m sure even Santa would love these by the tree!”

Leaving sugared cranberries for Santa in lieu of cookies sounds like a California thing if you ask me, and I think I’ll include a few in treat bags I make for my neighbors, UPS guy, postman, gardener and pool guy every year. I’ll keep my traditional fat slice of coconut cream cake for Santa. ~ Betsy
