Holiday side dishes like this cornbread casserole are all over the internet right now. With Halloween behind us, we’ve all turned our attention to Thanksgiving (or Christmas if you’re Target). As much as I love turkey, the side dishes are really what I look forward to during those big holiday feasts.

I’m always looking for new ways to jazz up the classics, and I’m kind of in love with the golden cornmeal crust on this cornbread casserole. In fact, I love the idea of cornbread casserole in general. It’s not cornbread, its not corn casserole (a personal favorite), it’s both! Pure genius. I’m definitely going try this one out on my guests this Thanksgiving.
