Zuppa di Orzo
When the weather gets cold, people are bound to get sick, and when people get sick, they need a hearty soup to ease their ailments. Jackie from The Seaside Baker makes this Zuppa di Orzo for her family when they’re feeling under the weather.
I’m going to let you in on a little secret. Most hearty soups like this one are made up of mostly interchangeable ingredients. If you don’t have chicken broth, use water or vegetable broth. If you don’t have diced tomatoes, use V8 juice or tomato sauce. If you don’t have cream, use milk or half and half instead. Pretty much any vegetable is fair game and so is any type of meat. No orzo? Add a different type of pasta or even quinoa. Cooking does not have to be complicated. Especially when you’re sick. No one wants to slave over a stove when they’re sick.
Here’s another tip from Jackie: Make a double batch and freeze half of it because soup freezes awesomely, and the next time you’re sick you will be so happy that the soup is already prepared and all you have to do is heat it up!
