This 15-minute chicken scallopine is only one of many reasons why I love this blogger. I’m so excited to introduce you guys to Wendy O’Neal from Around My Family Table. This busy mom of two is not only the queen of  fast and easy-to-make meals, but allergy-friendly ones as well. Food allergy or not, you’ll love Wendy’s recipes because they’re first and foremost delicious.

Sometimes the simplest answer is the most obvious, am I right? Case in point, this 15-minute chicken scallopine. I’m pretty sure it would take most of us longer than 15 minutes to go get take out food. In that time, you could have prepared this simple home cooked meal.

“If you’ve never had chicken scallopine, then you are missing out.  Basically, it’s a thin piece of chicken that is very lightly breaded and pan fried in a bit of oil.”

Duh. Why didn’t I think of that? That seems really, really easy.  Recipes like this one are great because they’re so easily adaptable. If you don’t have chicken, use pork chops, or even sliced eggplant. If you don’t have breadcrumbs, use Chex like Wendy suggests or crushed up Saltines. Simplicity is key.

Wendy’s vegetables were also ready in under 15 minutes, proving that cooking at home for your family does not have to take a lot of time or effort to be healthy and satisfying. ~Betsy
