Spinach and Artichoke Stuffed Mushrooms

My favorite thing to bring to holiday parties are appetizers like these spinach and artichoke stuffed mushrooms. Yes, that’s right. Spinach and artichoke stuffed inside of a mushroom! Why stop at spinach and artichoke dip or stuffed mushrooms when you can combine both into a tasty, bite-sized morsel? Pure genius. Get ready to majorly impress your friends and family.

Sarah describes them as  “delicious, creamy, melt-in-your-mouth stuffed mushrooms with spinach, artichoke and lots of cheese.” 

Looks like it’s about time to shelf our regularly scheduled healthy eating routine for some indulgence. You know what? There is a time and a place for “lots of cheese” and the holidays are it. Everything in moderation is not just a clever saying. It’s the truth.  I’ll most likely be taking an extra lap around the park with Olive, or skipping that 3rd glass of wine in order to make up for these tasty snacks, but I’m ok with that. Besides, these are bite-sized so if your will power is greater than mine, you could just have one and then fill the rest of your party plate with crudites. If not, then dig in and I’ll see you out and about getting your extra calorie burn on. It’s the holidays after all so forget the guilt and focus on joy, laughter, and delicious food.
