Sweet Potato Muffins

Suzanne Cowden

Yum

Everyone’s got their own classic muffin recipe, but I like to look for ones that are a bit unexpected like these sweet potato muffins. Not only are they chock full of fall flavor like candied ginger and molasses, but they’re good for you too! Did you know sweet potatoes are one of the world’s healthiest foods? They packed with vitamins B6, C and D which are essential for staying healthy this time of the year.

Eat muffins to stay healthy? That’s what I’m talking about! The holidays are full of overindulgence. It’s good to know that you can get all the decadent flavor with none of the guilt by baking up a batch of these sweet potato muffins.

uzanne focuses on food as centerpiece for both everyday routines and special occasions. Each recipe featured on Flour Arrangements, from simple loaves of bread to fondant decorated birthday cakes, comes with a story that blends life with cooking. Suzanne has always been a baker at heart. Friends convinced her to start writing Flour Arrangements after she made a few cakes for her kids’ birthday parties. At the time, she had just gone back to teaching at a small alternative high school in Friday Harbor, WA, but in her spare time, she began sharing stories about her attempts at baking breads, decorating cakes, and preparing other foods that time usually dictates people to buy rather than make. Now she's at home with her kids again after a whirlwind move to California. While her young girls — with their constant stream of projects — keep her busier than she ever was at work, she's still trying to squeeze in time to experiment in the kitchen as much as she can.
