This sweet potato and lentil chili is a great recipe for those of you resolving to eat meatless more often this year. Chilis or soups are always a good option when easing into a meatless lifestyle.  By adding legumes like lentils or beans, you still get that meaty bite, and the spices hold all the flavor so to the naked eye (or tastebud), nothing is missing. It’s a simple way to sneak some healthy stuff past even the pickiest eaters in your family. I’m confident that they won’t even know the difference.

Within the first bite of this chili, I was in heaven. The sweet potatoes and lentils are incredibly filling, and you have every guarantee that you won’t be missing the meat. Plus, with a side of cornbread, you’ll be sure to be asking for seconds!

Sounds good to me Chung Ah! Plus, it’s kind of chili “season” right now. It’s cold, football is on, and chili is a great option for the crock pot for those days when you’re super busy or too lazy to get off the couch.
