Erin of Platings and Parings shares her creative recipe that includes a simple trick for creating jalapeno-infused alcohol. It’s simple to do, but it does require time, so you’ll need to plan ahead. This works well with the grilled pineapple, as it needs to chill before it’s ready to mix into your cocktails.

And Erin’s secret ingredient that makes her recipe extra delicious? Vanilla extract!  Erin says, “The vanilla really compliments the inviting flavors of the grilled pineapple and gives a great roundness to the drink.”
