Tieghan is speaking my language with this Cheesy Black Bean and Quinoa Taco bake. First of all, I live by the motto, “when in doubt, make tacos.” I also believe that the fewer dishes required to make dinner the better. Finally, if it’s covered in melted cheese, then it’s automatically delicious in my book. This taco bake has it all!

I know that in many parts of the country the snow is still piling up, but have no fear, spring is right around the corner. Tieghan explains why this is a great meal for any season:

“Perfect for a mid-week, early spring meal when the weather could be really nice or just plain miserable. It’s full on snowing here and yet I do believe tomorrow is officially spring, so this healthy, cheesy comfort food is very welcomed. Also, there is queso fresco involved. Just too good.”
