 Aaaaahhhh Fall, I just love everything about it. There is already a chill in the air but the leaves haven’t really started changing much yet. With fall comes soup, so here is a really delicious looking Easy Indian Spiced Tomato Lime Soup. I love Indian spices and I adore tomato soup. Then add a splash of lime to liven it all up, perfection!! ~Tara

I walked into Walmart today and did a double take — there were pumpkins on the shelves. And scarecrows. And Halloween candy. Even though it’s still 101 here in Fort Worth, Walmart is selling autumn things. I literally can’t contain my excitement.

I had to refrain from filling my cart with pumpkin spice candles and orange hand towels. It wasn’t easy. I’ve waited all summer for autumn to come, and now it’s so close I can feel it. I compromised by buying my 7-month-old puppy this funky bat-creature squeaky toy. He loves it. Not only is it Halloween-themed, but it’s also the loudest squeaky toy ever invented.

In retrospect, I was probably better off with the hand towels.

Something else I’ve been refraining from? Autumn meals. It’s hard to justify baking pumpkin pies and roasting squash when there are ripe strawberries to be had. September is a strange month in that way. Not quite summer, not quite fall. I suppose time will come for my delicious autumn food. Until then, another compromise: tomato soup!

I haven’t had much soup since last winter, but this is the perfect recipe for the changing season. The soup itself is simple and easy; creamy tomatoes, zesty lime and a hint of spice makes it both hearty and refreshing. Serve alone or alongside your favorite toasty bread — it’s just what September needs!

 Easy Indian Spiced Tomato Lime Soup by Drool Worthy

Easy Indian Spiced Tomato Lime Soup

YOU’LL NEED:

-28-ounce can crushed tomatoes
-1/2 cup plain yogurt
-1 tablespoon lime juice
-1 tablespoon olive oil
-1/2 teaspoon ground cardamom
-1/2 teaspoon ground cumin
-1/2 teaspoon cayenne
-1 yellow onion, chopped
-2 garlic cloves, minced
-Salt, to taste
-Fresh cilantro, for garnish

DIRECTIONS:

Heat olive oil in a large saucepan over medium heat. Add onion, garlic, salt, cardamom, cumin and cayenne. Cook for 10 minutes or until the onion is soft, stirring frequently.

Add tomatoes and their juices. Reduce heat and simmer for 10 minutes.

Remove from heat; add yogurt and lime juice.

Transfer the soup into a blender and blend until smooth.

Garnish with cilantro. Serve warm.
