Butternut squash is a favorite fall ingredient in our house. We love the sweetness that roasted butternut squash adds to these simple enchiladas. Meat-free and packed with nutrients, this is the perfect inexpensive weeknight dinner the whole family will love. Serve with avocado and sour cream.
