Caprese Lasagna Roll Ups
~:: Cooking Classy ::~
Aww, just look at all the gooey, soon to be stretched and strung (upon my no longer empty fork) cheese and dream of what could be yours! Italian comfort food at its finest.
The saying “third times a charm”, it’s true. Yes this is my third attempt at creating what I’d envisioned, and at last a beautifully delicious success.

ABOUT JACLYN: Jaclyn, creator of Cooking Classy, considers herself a blessed wife and mother with a huge love of cooking! She’s no professional chef, photographer or web page designer, but she loves food and that’s what matters! Food is a big part of her life. Her family often joked around saying “food is her life” when she was only about 8 years old. Food is always on her mind. She is always trying to think up the next great meal or dessert. She’d have to say that she is a greater fan of desserts than the actual meal so you may find more desserts on her blog verses entrees. Hope you enjoy! Life is meant to be enjoyed and good food is a key factor in that.

Sautéed Kale with Sausage & White Beans
~:: An Edible Mosaic ::~
Hearty and comforting, this beautiful dish is the sort of thing I crave when the weather cools down. Kale, white beans, and garlic have a natural affinity for each other, and chicken sausage is a delicious addition. It comes together in about 30 minutes and is the perfect fall dinner. To make this dish vegetarian (vegan actually), omit the chicken sausage, use vegetable stock or water instead of the chicken stock, and use two cans of beans instead of one. And if you have leftovers, they are amazing the next day topped with a poached or fried egg.
ABOUT FAITH: Faith Gorsky is the writer, recipe developer, photographer, and food stylist behind the blog
www.AnEdibleMosaic.com. She lives in Upstate New York and loves to travel, especially to places steeped in rich culture and history. Her favorite thing to do is go into the kitchen hungry, open the fridge, and start creating; she also enjoys reading (cookbooks mostly), vintage shopping (especially in old markets), watching movies (of all genres), and is enamored with ancient cultures (especially Rome and Egypt). Her first cookbook,
An Edible Mosaic: Middle Eastern Fare with Extraordinary Flair (Tuttle Publishing), which is a collection of authentic Middle Eastern recipes handed down to her from her husband’s family, was released on November 6, 2012. Faith can also be found on her
