Jicama & Watermelon Salad

Nothing says summer like watermelon. While it’s delicious sliced in wedges and eaten out of hand in the back yard (and don’t forget that seed-spitting contest), it’s even better fancied up in salad. This Watermelon & Jicama Salad from Erin of Dinners, Dishes & Desserts puts a fresh new perspective on watermelon salad.

While many summer watermelon salad recipes include cheese or onions, Erin’s incorporates jicama instead: “Jicama is slightly sweet.  It is kind of a cross between a potato and a pear.  It has a very unique taste, and it pairs perfectly with the sweet and juicy watermelon.  The honey-lime vinaigrette just brings it all together.”

This dish can be prepared ahead of time and travels well. Simply toss with the dressing right before serving, and it’s good to go! Happy summer!
