Broccoli Divan An Edible Mosaic

You’re probably familiar with Chicken Divan; this dish is my vegan version of that classic. There is no meat replacement (like beans, tofu, or a commercial vegan “meat” product); instead a vegan “cheese” sauce made with nuts, nutritional yeast, and plenty of seasonings adds protein along with delicious umami flavor – plus broccoli is a good source of protein too! And here’s a speedy trick: to make this dish even faster, you can skip the bake time and just serve steamed broccoli topped with this “cheese” sauce. If you’ve been thinking about trying a vegan cheeze sauce, this is the perfect one to start with!
