Smoky Coconut and Butternut Squash Soup by Amuse Your Bouche
When I first decided to post only vegan recipes for the whole month of January, I was a little anxious that I wouldn’t be able to come up with anything that didn’t leave me feeling like something was missing (I’m known for my love of cheese!). But when I tasted this soup, I knew that veganism wasn’t going to be a problem after all. This creamy butternut squash soup has coconut milk to add a hint of sweetness, and paprika to add a smoky depth. The combination is just perfect! Served with red lentils to make the soup really hearty and filling, and some crusty bread for dipping, this soup was the perfect vegan lunch. Even my carnivorous fiancĂ© was convinced!
