I try to use fresh, seasonal ingredients whenever I can and what could be better than using homegrown tomatoes and herbs in this bold and colorful Polenta with Slow-Roasted Cherry Tomatoes and Basil Pesto? Growing my own organic fruits, vegetables, and herbs is not only convenient, but so much fun, too. It’s such a delight to the pick fresh tomatoes and herbs moments before slow roasting them in the oven, and, unlike store-bought basil, those grown at home have are fragrant and full of flavor.
