If you’ve made resolutions to eat healthier in the new year, you’re going to want to add these Raw Zucchini Sushi Rolls to your meal plan. They’re fresh, healthy, and delicious, and they’re fun to make, too. Sonnet of In Sonnet’s Kitchen shares her fun twist on sushi rolls with her vegetarian version.

Sonnet says, “When you’re making traditional sushi rolls, you’ll use a large strip of nori, roll up your ingredients, and then cut the roll into your individual sushi pieces.  The fun part of using zucchini is that it makes individual rolls and is much easier to handle, especially if you’re new to sushi-making.”

This recipe includes the additional twist of replacing rice with blended cashews. When you make your rolls, include fresh veggies and herbs of your choice to make them just perfect for you. Happy eating!
