Garlic Spaghetti Squash with Herbs

This garlic and herb spaghetti squash is such a great example of how to eat healthy without giving up on flavor. With the holidays coming, I always try to reign myself in a bit eating-wise to compensate for the inevitable pig out come Thanksgiving and Christmas. The only problem is that delicious comfort foods are bombarding me from every corner of the internet. How’s a girl supposed to keep her growing mid-section in check with so much temptation out there?

Well thanks to Lindsay and this garlic spaghetti squash with herbs, I won’t be crying over salad greens. She says,

“This is the kind of food that I love eating: simple, vibrant, veggie-friendly, and packed with flavor and unique textures.” 

Me too Lindsay, me too. So this holiday season, don’t rule out cheese. Just eat it on spaghetti squash instead of actual pasta. Skip the meat, but pile on some toasted pine nuts for protein and texture. Who needs heavy sauces when you have vibrant fresh herbs for flavor? There’s always a way to have a healthy, yet satisfying meal with a couple of simple trade-offs.
