Funnel cakes are an instant crowd pleaser. We love snacking on them at the local county fair during the summer, but can you imagine my kids’ surprise when I whipped up a batch on Christmas morning last year?! I knew I wanted to try this recipe from Cooking Bride, but when I saw how easy it was, I knew it could be trouble! Whip up a batch to sweeten your littles’ weekend or add a special touch to a holiday brunch.

An added bonus? Just because I have a gluten allergy doesn’t mean I cannot indulge in a childhood favorite with my family. We tried this recipe with an All-in-one gluten free flour and it didn’t need any adjustments! It was just as good, if not better than the version I remember from the fair. If your batter starts to thicken up too much, just add a little milk or water to loosen it up. You want to make it easy to get those fun, swirly designs.  ~Val

You don’t have to wait until the fair rolls into your town to enjoy this deep-fried snack. Funnel cakes are so easy to make at home. Once the hot cakes come out of the fryer, coat them high with powdered sugar and keep plenty of napkins handy.

I solemnly swear to make this dish more frequently.  Ya’ll are my witness.

Every time I make it, I wonder why I don’t make it more often.  It is quite possibly one of my favorite ways to eat eggs.  I first posted this back in 2010.  However, I haven’t made it since then.  Three years WAY too long to let this one go!

This is a super easy recipe for Easter brunch or just a lazy Saturday morning.  Prepare your biscuitsfirst and while they bake, get the eggs ready to go.  Then while the eggs bake, make the Hollandiase sauce.  I’m sure you’ve probably heard rumors that Hollandaise sauce is tricky to make.  This recipe is food proof and it really does make the dish.  I have eaten this both with and without sauce, and the Hollandaise brings a completely different level of flavor to the dish.

Sometimes I wish I could film what goes on behind the scenes in my kitchen when I’m cooking.  You only get to see the finished product.   Occasionally, it’s the behind-the-scenes that makes the dish truly memorable. I came up with this idea for a Southern-style minestrone soup using local ingredients and was anxious to give it a try.  My plan was to pick Little Tot up from daycare and while he was sitting in his highchair eating dinner, I could get my prep work done.  As soon as I got him to bed I planned on getting to work. That is what I “planned”…

Asian-Style Skirt Steak

I have never used skirt steak before but got curious about it and ventured into an unknown realm. Adriano’s butcher had some secreted out the back and was surprised at the request because it is not a popular cut here. It is very flavorful but can be tough. The secret is to let it marinate for a while with a wet rub on it and the steak will tenderize nicely. It also must be grilled hot and fast and mustn’t be overcooked. Why the butcher had some out the back if he thought no one would buy it was never revealed. But maybe he buys entire cows at a time and there is a skirt steak in each beast and he can’t send it back. That’s right – only one skirt steak per cow, but it’s big. You would think this would make it rare and expensive but that was not the case. Maybe he was happy to see the back of it.
