There are pre-mixed blends, like Carol's or Grandma's, or you can make your own. I make mine with 1 cup each of brown rice flour, white rice flour and sweet rice flour, and then 1/2 cup each of tapicoca flour/starch and potato starch. Be sure to use 1/2-1 tsp xantham gum for each cup of the blend you use in recipes (or you can just add the xantham gum to your blend when you make it). This will sub for the missing gluten. If you just use rice flour without the other flours and xantham gum, your cookies will probably be super dense.
