Blackened Chicken & Strawberry Salad
Don’t save all of those sweet, ripe strawberries for dessert! They’re great in savory dishes, too. Christine of Cherry on My Sundae shares her fresh, tasty recipe Blackened Chicken and Strawberry Salad.
This flavorful salad makes a perfect summer meal. Spinach, feta, dried cranberries, and lots of fresh strawberries complement the chicken perfectly, and the dish gets extra strawberry goodness from a homemade strawberry vinaigrette.
Christine recommends using “fresh strawberries to really make them shine in the salad. The sweet strawberries with the tangy balsamic vinegar is a great combination, as is almost every fruit with balsamic vinegar!”
With its tantalizing flavors and gorgeous presentation, this simple salad would make a lovely meal to serve guests on a hot summer evening. Enjoy!
