Stuffed peppers are one of the few meals that I can make vegetarian and The Hubs won’t complain. That’s not to say that you can’t make them with meat, but there is something about stuffed peppers that is so satisfying and hearty, meat is not a necessity. When I saw this stuffed pepper soup from Jaclyn from Cooking Classy, I thought, “what a genius idea, and perfect for this time of the year!”

Jaclyn says ” The peppers offer a mellow and faintly sweet flavor while the tomatoes and beef kick in that flavor that will remind you of a traditional stuffed pepper.  And the rice in this soup gives it such a great texture and adds some body to it. This a fairly thick soup and it has a consistency similar to a stew, which I love because it will fill my family up and I don’t have to make a bunch of sides to serve with it.”

If it wasn’t 85 degrees in SoCal right now, I’d be making this soup tonight. Instead I will be pinning it for later! I hope you do the same.

One of my favorite meals ever, though. Bacon followed by cheesecake. And not just any cheesecake, these decadent Black Forest Cheesecakes layered with an Oreo crust, a rich, velvety smooth chocolate cheesecake, sweet and fluffy whipped creamy and a slightly tart, vibrantly red cherry topping (which is one reason I cheated and used canned, I love that red color). It is so easy to make and yet so delicious.

If there’s a breakfast food that you want to try soon, please let these be it! I wouldn’t ever be able to tell you in words how good they are, you just need to try them yourself. These are basically blueberry cinnamon rolls in french toast stick form. Or, just imagine your favorite french toast turned cinnamon roll, meets blueberry filled, homemade toaster struedel and all of that goodness is then plunged into a creamy, sweet, glaze-like cream cheese dipping sauce. See, you need to try them! I’m pretty sure my family had the entire batch finished in a number of minutes.

Salad with Berries, Grilled Lemon Chicken, Feta and Homemade Poppy Seed Dressing by Cooking Classy

Today was like Christmas for me! I opened my patio door and walked out to a temperature that was most definitely perfectly acceptable for grilling. Yes, grilling season has arrived and I couldn’t be more ready for it! I love the flavor of grilled chicken. I love the flavor of basically grilled anything for that matter. Its a flavor that can’t be imitated from baking or pan searing. I did debate with this recipe whether to do a baked crispy panko crusted lemon chicken or a grilled lemon chicken. I’m glad I went with a grilled version. It is perfect with this salad and grilling the chicken is a savory and simple flavor enhancer.

Cream puffs have been one of my favorite desserts since the first time I sunk my teeth into one. The first one I ever had was the kind that you purchase from the frozen section of the grocery store, which someone had brought to a party many, many, years ago. Indeed those actually were quite good, so immediately following that party, I remember going home and searching for a recipe to make them from scratch. The homemade version was of course far better than the store-bought version. Since then I’ve tried several recipes and learned a few tips and tricks along the way. The two tips I like best are replacing the traditional all-purpose flour used in the cream puffs with bread flour and replacing one of the whole eggs with two egg whites. The bread flour adds more gluten which will allow the use of more liquids and better rise and the egg whites will help dry the actual puffs more.

I was never a fan of chicken pot pie until a friend so kindly brought me this dish after I had my baby a few years ago. I’m fully in love with it! Rather then getting a surrounding of heavy pie crust you get a fluffy biscuit topping that will quickly have you loading your plate with a second round. In my opinion the topping is what makes this dish. It sets it apart from it’s competitors, being loaded with Parmesan cheese, plenty of heavy cream, some black pepper and cayenne pepper for a slight kick, and I also added a little garlic powder (because how can I resist?). Then to finish, it’s browned in the oven to beautifully golden perfection.

Sautéed Kale with Sausage & White Beans

Hearty and comforting, this beautiful dish is the sort of thing I crave when the weather cools down. Kale, white beans, and garlic have a natural affinity for each other, and chicken sausage is a delicious addition. It comes together in about 30 minutes and is the perfect fall dinner. To make this dish vegetarian (vegan actually), omit the chicken sausage, use vegetable stock or water instead of the chicken stock, and use two cans of beans instead of one. And if you have leftovers, they are amazing the next day topped with a poached or fried egg.
