With the start of a new year and resolutions to keep, we’re all looking for recipes that allow us to snack in a healthier way. Hummus is a great protein-filled way to indulge and still keep the carbs and calories to a minimum. Making your own version at home is not only economical but it allows you to customize it however you like. For this one, which happens to have become a favorite in my house, fresh baby spinach is thrown in and given a quick whiz with lots of citrus for bright color and flavor. It makes a great snack on its own and goes great in wraps and sandwiches, as well.
